Quick Taco Salad
Last night, my wife and I spent the evening wrapping presents. Well, let me rephrase that. . . I wrapped one (sorry to my brother-in-law Chris; you will know it when you see it) and decided I was better off stuffing boxes and bags. My wife is a wrapping machine! I mean she goes all out making the most beautiful presents you have seen. With ribbons and bows, she can make the simplest gifts look remarkable. Now me, on the other hand, I am the best bag-stuffing, box-packing husband you have ever seen. Shirts in a box, no problem, purse in a bag, no problem, 14-dimensional bulky object with handles, big problem! LOL!
As my wife says, wrapping the presents is half the fun. Although our new kitty, Isis, thinks its fun too. She is now running around the house wearing a Christmas bow. I will post pics soon.
Simple Taco Salad
Serves 2
Ingredients
- 1 Large Chicken Breast
- 1 Packet Taco Seasoning
- 1 Large Flour Tortilla
- 1/2 Tomato, diced
- 1/4 White Onion, chopped
- 1 Cup Shredded Cheese
- Mixed Lettuce
- Vegetable Oil
Dressing (Served on the Side)
- 1/4 Cup Sour Cream
- 1/4 Cup prepared Guacamole
- 3 Dashes your favorite Hot Sauce
Directions
- Heat a small pot of vegetable oil over medium high heat and heat oven to 350 degrees.
- Coat both sides of the chicken breast with half the taco seasoning packet.
- In a skillet heat 1 tablespoon of vegetable oil over medium high heat and cook chicken both sides for 3 minutes; then place in oven for 10 minutes until juices run clear.
- While chicken is cooking slice the tortilla into thin 1/4 in by 2 inch strips.
- Place place tortilla strips int the pot of hot oil a fry for 5 to 10 minutes until desired brownness. (We like ours crispy.)
- Once the strips are fried, place them on paper towels and sprinkle with remaining Taco seasoning and mix well.
- Once chicken is done, chop into bite-size pieces.
To make Dressing
- Combine Sour Cream, guacamole, and hot sauce in a bowl.
- Hot sauce is optional but I think it adds a nice level of flavor.
- It’s best served on the side; then each bit gets the perfect amount.
Final Steps
- On 2 plates layer:
- Lettuce, tomato, onion, chicken, cheese, and tortilla strips.
- Serve with a good drink like a Margarita with lots of salt.
