Peach-Glazed-Barbecue Turkey Breasts

Last night’s dinner was a fun and simple dish that tried to to be
healthy. However, you know me, one minute healthy, the next minute smothered.
I had plans to make simple barbecue turkey breast, but I just couldn’t leave well
enough alone. My simple barbecue turned into a nice little feast that is

Her recipe is brilliant and a time saver. I have used it several times,
and each time it has worked perfectly. Throw in a quick rice dish with
dinner, and you have a perfect little dinner all wrapped up for two.
You can try this barbecue sauce with different fruit preserves, each adds
its own unique flavor. You could go for one more notch by adding some
spiced rum to the sauce as well. Then you could drink and eat at the
same time…

Peach-Glazed-Barbecue Turkey Breasts

Serves 2

Ingredients

2 Boneless Skinless Turkey Breasts
½ Cup Bottled Barbecue Sauce
¼ Cup Peach Preserves
1 Tablespoon Brown Sugar
1 Tablespoon Apple Cider Vinegar
1 Tablespoon Fresh Lime Juice
1/8 Teaspoon Red Pepper

Directions

1. Preheat Grill to medium-high heat.
2. Bring Barbecue Sauce, preserves, sugar, and vinegar to a simmer in a
saucepan over medium-high heat. Cook for 5 Minutes or until sauce
thickens.
3. Add lime juice and set aside.
4. Coat turkey with non-stick spray and season with kosher salt (about
¼ teaspoon).
5. Grill turkey about 4 minutes each side with the lid closed.
6. Brush both side of the turkey with sauce and grill until sauce is
caramelized, about 2 minutes each side.
7. Serve turkey with remaining sauce, grilled corn on the cob and rice.
8. Enjoy!
